Pickled Blue or Blackberries
Pickled Blue or Blackberries with Goat Cheese on Toast
Ingredients
1 cup blackberries or blueberries
1/2 cup warm water
1/2 cup apple cider vinegar
1 tablespoon of honey
1/2 teaspoon sea salt
1/2 teaspoon peppercorns
french baguette
goat cheese
Directions
Set blackberries, goat cheese and bread aside
Combine all of the remaining ingredients together and stir until the salt is dissolved.
Fill a jar with the blackberries, and pour the pickling liquid inside. Cover with a lid, shake gently, and chill for 1 hour. Continue to shake occasionally during this hour
Meanwhile cut french baguette into slices
Brush with olive oil and bake in oven on 350 till crispy
Spread toast with goat cheese and place one or 2 pickled blackberries on top
Drizzle with honey
